One of our favorite desserts is Aggie Caldwell's Caramel Dumplings. Aggie was my father's foster mother. We always called her Grandma.
To start this yummy recipe, measure out 3/4 cup sugar, 2 3/4 cups of hot water, 1/2 cup sugar and 1 T butter or margarine.
Place the 3/4 cup sugar in a cast iron dutch oven or frying pan.
Heat the sugar until it is melted and carmelized.
Once carmelized, add the butter and stir until melted.
Add 2 3/4 cups hot water and the other 1/2 cup sugar. Let it simmer on low heat for 10 minutes.
To make the dumplings, Measure out the following: 1/2 cups sugar, 1/2 cup milk, 1 teas. vanilla, 1 T. butter, 1 t. baking powder, 1 1/4 cup flour, and a pinch of salt.
Cream the butter and sugar together.
Mix the rest of the ingredients together with the butter and sugar mixture until a soft dough is formed.
Drop the dough by the teaspoonful into the caramel syrup. Cover and cook on medium for 2o minutes.
The end result will be an uber rich dessert they will please everyone at the table. Serve with vanilla ice cream, whipped cream, or fresh heavy cream. Best if served while hot.

Yummiest and cheapest dessert ever! And it is SO unique. Mom would have it baking while we were eating so it would be hot and fresh out of the oven when we were done eating our dinner. That was how we did it at home.
ReplyDeleteWhen we were camping or cooking out in the Uinta Mountains, Dad was in charge of the foods that required cooking on the fire. He would make his famous Dutch oven Wild Horse Potatoes (hint, hint Sherone) and then the Caramel Dumplings would be cooking in another Dutch oven while we were eating. No ice cream in the mountains but there was NO complaining!

Hey sis! A little update on a yummy twist I discovered for this recipe. So I finally made this for hubs. He's not a real caramel guy but he was adequately complimentary. The next night I had leftovers (which honestly NEVER happens because these are so yummy) and I had an apple I had used in my detox water that wasn't really good for eating raw after soaking in water for two days. So I sliced it up and put it in a small greased baking bowl. Then I scooped the leftover caramel sauces on the apples and stirred it up. I chopped up the leftover dumplings in into small chunks and spread them on the top. I then baked that for 1/2 an hour for 30 minutes at 350. Hubs went crazy for this. I'm going to be experimenting to see if the apple slices would work on the first take and not stick to the bottom. I'm thinking maybe coat them in coconut oil or melted butter? Idk but if you get curious too let me know.
